Grapefruit Avocado Pistachio Salad

Ingredients

Kings River Grapefruit

Raspberry Oranges

Arugula and Spinach Mix

2 avocados

1/2 cup pistachios

Olive Oil

Raspberry Oranges juice

Salt

Pepper

instructions

Prep the citrus by removing the pith and slicing the grapefruit and Raspberry Oranges into round slices.

Cut the avocado into clean slices so they hold their shape in the salad.

Spread the greens on a large platter and arrange the citrus slices and avocado.

Sprinkle pistachios generously over the top.

For the dressing, combine olive oil, juice from the Raspberry Orange, salt and pepper.

Drizzle the citrus dressing over the salad and serve immediately for the freshest taste.
