Vanilla Grapefruit Yogurt Cake

Ingredients

Cake:

2 cups flour

2 tsp baking powder

1/2 tsp salt

3 large eggs

1/2 cup Greek yogurt

1 tsp vanilla paste

1 cup sugar

1/2 cup vegetable oil

1/2 cup Kings River Grapefruit juice (about 2 grapefruits)

1 tbsp Kings River Grapefruit zest (about 1 grapefruit)

 

Glaze:

1 cup powdered sugar

2 tbsp grapefruit juice

1 tsp grapefruit zest (optional, for extra flavor)

1/2 tsp vanilla extract

instructions

  1. Juice grapefruits and set aside.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a medium bowl, whisk eggs. Once eggs are whisked, whisk in the Greek yogurt, sugar, oil, grapefruit juice, grapefruit zest, and vanilla paste.
  4. Pour the wet ingredients into the dry mix with a rubber spatula, being careful not to overmix.
  5. Pour the batter into the prepared loaf pan. Bake for 45 to 50 minutes, testing cake to make sure it’s finished.
  6. Remove and let cool on a wire rack. Cake needs to completely cool before glazing.
  7. In a small bowl, combine all of the ingredients for the glaze. Whisk until smooth. Remove cake from pan and pour glaze on top.
