Ingredients

Citrus Slaw:

2 cups purple cabbage thinly sliced

2 cups green cabbage thinly sliced

1 cup carrots grated

1/4 cup cilantro chopped

2 stalks green onion thinly sliced

 

Citrus Dressing:

2 tablespoons freshly squeezed lime juice

1/4 cup (about 1 orange) freshly squeezed Kings River Navel Orange juice

1 tbsp honey

1/4 cup mayonnaise

2 tablespoons olive oil

1 tsp Kings River Navel Orange zest

1/2 tsp salt (or to taste)

 

Protein:

1 pound pork

1/4 cup teriyaki sauce

8 small tortillas

instructions

  1. Add cut-up purple cabbage, green cabbage, grated carrots, cilantro, and green onion to a bowl for the citrus slaw.
  2. Add freshly squeezed lime juice, orange juice, honey, mayonnaise, olive oil, orange zest, and salt to create the citrus dressing.
  3. Add citrus dressing to citrus slaw and toss together.
  4. Segment oranges and set them aside for later.
  5. In a large skillet over medium heat, warm 2 tablespoons of olive oil. Once hot, add the pork and cook until browned and fully cooked, approximately 4 to 6 minutes.
  6. Pour over teriyaki sauce and cook for an additional 1 to 2 minutes or until slightly thickened and pork is coated.
  7. Serve pork in tortillas, top with citrus slaw and orange segments.
