Ingredients

Cake:

1 1/2 cups flour

1/2 tsp baking soda

1 tsp baking powder

1 cup sugar

2 tsp Kings River Lemon zest

3 large eggs

1/2 cup olive oil

1/2 cup milk

1 tsp vanilla extract

1/4 tsp salt

 

Garnish:

2 tbsp sugar

  1. In a large mixing bowl, combine sugar and lemon zest. Rub the lemon zest into the sugar until it resembles wet sand.
  2. Add the eggs and olive oil, then whisk until the mixture becomes lighter in color and texture.
  3. Add vanilla and lemon juice and whisk until combined.
  4. In a medium bowl whisk together the salt, baking soda, baking powder, and flour.
  5. Alternating with the milk, add the dry ingredients to the wet ingredients in two batches. Mix together until combined.
  6. Pour the batter into a spring form and sprinkle two tablespoons of sugar over the top.
  7. Bake for 50 to 55 minutes until the cake has risen and the top has turned a golden brown.
  8. Garnish with freshly sliced lemons.
